Chocolate Lava Fondants

A decadent way to end a dinner party.
180 grams PnP butter, plus extra for greasing
15 grams cocoa powder, for dusting
2 slabs dark chocolate, 90g each
3 PnP eggs
3 egg yolks
180 grams PnP castor sugar
45 grams cake flour
1 pinch PnP salt
1 handful fresh berries, for serving
1 sprig PnP fresh mint, for garnish
Preheat oven to 200.
Grease 6 ramekins and dust insides with cocoa powder (this will make turning them out easier).
Melt butter and chocolate together over a double boiler. Set aside.
Whisk eggs, yolks and sugar with an electric beater for about 3 minutes until light and fluffy and pale in colour.
Fold through melted chocolate mixture.
Sift flour and add salt.
Stir into chocolate mixture until well combined.
Pour into ramekins and bake for 12–14 minutes (the centre should still be wobbly).
Remove and cool.
Turn out on plates.
