Litchi and Prawn Lettuce Cups with Passion Fruit Dressing

A summery dish, perfect for serving at a party.
15 ml PnP butter
2 PnP red chilli, chopped
18 prawns, heads removed, peeled and deveined
250 grams litchis, peeled, de-pipped
3 heads PnP baby gem lettuce, leaves separated
45 ml passionfruit pulp
45 ml PnP orange juice
15 ml PnP olive oil
1 handful PnP fresh basil, for serving
1 handful PnP fresh mint, for serving
Heat butter in a pan.
Fry chilli and prawns for 2–3 minutes or until prawns turn bright pink.
Remove from pan and toss through litchis.
Divide between lettuce leaf 'cups' and arrange on a platter.
Whisk passion fruit pulp, orange juice and oil together.
Sprinkle lettuce cups with fresh herbs and serve with dressing on the side.
