Mango and Passion Fruit Relish Skewers

This relish tastes good with chicken or beef.
1 PnP red onion, finely chopped
30 ml PnP olive oil
2 PnP garlic cloves, chopped
2 red chillies, deseeded and chopped
500 grams mangoes, peeled and finely diced
125 ml passion fruit pulp
60 ml juice and zest of 1 lemon
250 grams PnP brown sugar
60 ml water
4 chicken fillets
30 ml PnP olive oil
1 handful fresh coriander leaves, chopped, for serving
1 red chilli, finely chopped
4 pitas, for serving
Sauté red onion in olive oil.
Add garlic and red chillies and fry for a minute.
Add mango, passion fruit pulp, juice and zest of lemon, brown sugar and water to pan.
Simmer for 20-30 minutes cool and refrigerate until needed.
Cube chicken fillets and add 125ml relish. Marinate for 30 minutes.
Thread onto skewers and fry in olive oil until golden.
Place on a baking tray and bake at 180°C for 10-15 minutes until cooked through.
Brush with 125ml relish.
Serve with chopped coriander, chillies and pitas on the side.
