Perfect dessert for your Valentine's Day dinner in.
300g of Lindt Dark Excellence Chocolate, or milk chocolate, melted
2 cups of PnP Vanilla Flavoured Ice Cream
2 large Nestle Peppermint Crisp chocolate, crushed
Using a pastry brush, brush the inside of each ice tray mould with melted chocolate.
Allow to set and repeat.
Mix ice cream and Peppermint Crisp together.
Place a dollop of ice cream into each hollow and freeze.
Top frozen ice cream with a little more melted chocolate to seal in filling.
Freeze again until solid.
Gently tap mould against a hard surface to unmould and serve immediately.
