Mushroom & Lentil Bolognese

Try this delicious recipe.
45 ml PnP olive oil
2 PnP garlic cloves halved
1 PnP onion, diced
1 carrot, diced
1 stick PnP celery, diced
1 PnP leek, chopped
250 grams button mushrooms, sliced
2 PnP tomatoes, deseeded and diced
2 stalks PnP fresh thyme
375 ml vegetable liquid stock
400 grams tomato-based pasta sauce
1 can PnP lentils, (410g) drained
15 ml PnP fresh parsley, chopped
1 bowl courgetti noodles, cooked
2 handfuls grated parmesan cheese
Heat the oil in a pan and gently fry the onions and garlic for 5
Add the carrot, celery, leek and cook for 3 minutes.
Increase the heat and fry the mushrooms for 5 minutes.
Add the tomatoes, thyme, stock, and pasta sauce. Simmer for
