Summer Berry Tarts

It’s the perfect sweet treat to any meal. Serves: 4
1 cup flour
1 tablespoon castor sugar
½ cup butter, cold
1 egg, lightly beaten
2 tablespoon cold water
2 tubs cream cheese
1/4 cup honey
3 cups variety of berries
1 cup fresh cherries
Preheat oven to 180°C
Grease and prepare a tart dish.
Sift flour and sugar into a mixing bowl, add butter and mix together with fingers until crumbly.
Add egg and mix together, and blend in cold water.
Wrap up dough consistency in cling wrap and chill in fridge for 30 minutes.
Dust the countertop with flour and roll out pastry.
Using your tartlet baking tin, cut out the base of you tart, adding an additional 2cm to ensure you cover the entire base of the tin.
Using your fingers, gently place the pastry in the tin. Trim the excess pastry from the edges of the tin.
Prick pastry with fork and blind bake in oven for 10 minutes until golden brown.
*(Blind baking is the process of baking a crust or pastry without the filling. It must be fully baked before pouring in the unbaked filling).
Remove from oven and set aside to cool completely.
In a large mixing bowl, add cream cheese and honey and mix well.
Pour into prepared pastry case and top with fresh fruit pieces.
