Whisky Caramel Affogato

An impressive, easy and rich dessert drink.

Main ingredients

250 ml PnP sugar
60 ml water
60 ml PnP cream
60 ml PnP butter
45 ml whisky, (optional)
8 scoops PnP vanilla ice cream
4 double espresso's
8 caramel biscuits or wafers, to serve


Heat sugar and water in a pot, stirring to dissolve sugar.
Bring to the boil and cook until the liquid darkens to a rich caramel colour.
Add cream and butter (be quick so that the sauce doesn’t continue to caramelise and burn).
Boil to combine, then refrain from stirring for 2 to 3 minutes.
Stir and remove from heat.
Stir in whisky. Cool completely.
Place 2 scoops ice cream and 2 Tbsp (30ml) sauce in 4 glasses.
Pour a double espresso into each glass.
Serve with caramel biscuits or wafers.
