Halloumi Burgers with Zingy Slaw

Cook the halloumi just before serving to prevent a rubbery texture.
1 red chilli, chopped
1 clove garlic, finely chopped
2 spring onions, chopped
2 Tbsp (30ml) white wine vinegar
2 Tbsp (30ml) water
Juice (30ml) of 1 lime
1 Tbsp (15ml) grated palm sugar or castor sugar
1 firm mango, cut into matchsticks
¼ pineapple, cut into matchsticks
4 cups (200g) shredded red and green cabbage
Handful fresh coriander, chopped
4 burger buns
Mayonnaise, for spreading
1 packet (4) PnP halloumi burgers
1 Tbsp (15ml) olive oil
Salt and milled pepper
Combine dressing ingredients and set aside.
Toss mango, pineapple, cabbage, and coriander together to make a slaw.
Heat a griddle pan and toast buns until lightly charred, then spread with mayonnaise.
Toss slaw and dressing together.
Drizzle halloumi with oil, season and cook in a griddle pan until lightly charred on both sides.
