Strawberry Cheesecake Iced Terrine

375 ml frozen strawberries
250 ml PnP sugar
1 tub PnP cream cheese, (250ml)
125 ml PnP icing sugar, sifted
5 ml vanilla essence
375 ml PnP vanilla ice cream, softened
250 ml PnP strawberries, chopped
100 grams PnP pistachios, chopped
500 ml ice cream
1 packet no name Marie biscuits, (200g)
125 ml melted butter
1 punnet berries, to serve
Heat frozen strawberries, 1 cup (250ml) water and sugar in a pot. Reduce until syrupy, mashing berries with a spoon. Cool.
Line a 22x12cm bread tin with cling film. Whisk cream cheese, icing sugar, and vanilla essence together.
Stir in softened vanilla ice cream. Spoon into prepared tin.
Top with chopped strawberries and chopped pistachios and freeze.
Mix strawberry syrup through ice cream and spread on top of frozen berry layer.
Blitz Marie biscuits and melted butter together. Spread over ice
cream to create a base and press down to flatten.
