Specialty Sauces report highlights

The speciality sauce market is dominated by the “other” category. The relatively higher value share for this category, is indicative of the premium pricing of these products, and continues to enjoy above average annually price increases.

Hot sauce volumes saw erosion during 2011, with a decrease recorded for the year. Given the positive track record of the category,

Lemon juice recorded a limited increase during 2011. The category saw relatively substantial growth in 2008 and 2009, and a decline during 2010.

Marinade volumes have seen a level of volatility in recent years, with a growth in 2010, and a decrease during 2011.
